La Manuela Estate lies in the Region of Caldas, close to the small town Aranzazu. After the Estate's coffee is collected, it is weighted. Then moved from the coffee plantation to the wet processing plant in a small truck. This truck makes several trips in the afternoon. When the coffee arrives, it is emptied into a hopper and from there it goes to the shell peeling machines. After that, it goes to a desmucilaginador, this machine takes out the honey. Their new technology means there is no fermentation process anymore. Leaving more man hours for caring for the following harvest. Finally, the coffee is dried by the sun and if the sun doesn't shine- in a heating chamber.
This is a beautiful complex coffee. Typical of Colombia, the full bodied cup is complimented with silky chocolate notes, light citrus of lemon blossom and a destinctive note of creamy caramel to finish. A perfect pour-over or sweetened with a drop of warm whole milk.
